As for chocobo colouring, considering other FF games chocobo colour was actually part of the chocobo's breeding, it just wouldn't work, unless it was some kind of dye system. But then, I'd consider that a form of animal abuse. That poor chocobo!

But I want a black chocobo!
I love my chocobo enough to want it irl.
I meant feathers as in a magical effect, not dye. You equip the colored feather and the chocobo becomes that color.

As for capes and stuff, I see your point. Maybe if they did it slowly and bit by bit over time, I wouldn't mind waiting.
