Pretty sure the devs said a while back that he's dead. All you're seeing of him is what the concentrated amounts of Aether in Coil are allowing you to see.
In contrast, they never came and flat out said that Louisoix is dead. They just said that the events surrounding him at Carteneau will be revealed through the Coil quest line. So whether he's actually dead or not is still up in the air.

Also, they never said you can't fight a dead guy. The Nael in FF14ARR could simply be a manifestation created by Aether. Strong manifestations of Aether can interact with the real world as shown through Primals which are beings manifested through Aether (which is why Aether Crystals are always needed to summon them before they appear in Eorzea) and to maintain their existence they consume Aether Crystals to maintain their Aether.
All Nael needs is a steady flow of Aether to maintain his existence which Bahamut can easily provide due to his Elder Primal status.

I highly doubt SE would kill off Bahamut considering what he/it represents in the FF universe. I would have thought it near impossible to actually kill Bahamut, at least without the player "killing" him personally. It's also too good an opportunity to add more content for them to pass up, would probably make for an epic boss fight and could easily add up to a lot more than just 1.
We're not talking about Bahamut but about Nael here....
However, to your comment Bahamut defeat will be a while since Coil Storyline is to serve as a side story explaining what happened to bahamut but it also will serve to explain what lead to Bahamut's return in a future FF14ARR Main Storyline. The Final set of Coil will most likely just have us fight a tough boss and once that boss is defeated we will see a cutscene showing bahamut's return to foreshadow the future Main Story about defeating Bahamut.
Then after Bahamut defeat we will see the Ascian reveal more of their plans and reveal Bahamut is only the first of many other Elder Primals they have planned to unleash on the world. Eventually leading to the next expansion storyline revealing a new Elder Primal stronger or equally as strong as Bahamut.

Bahamut wasn't particulary alive to begin with. He was created by allagans using technologies and dark(?) crystal. Nael van Darnus is dead and gone. What we're seeing is a memory projection, not an actual aetheric being such as a Primal. There's a reason Louisoix and Van Darnus didn't say a word, they aren't Auron who could interact with things despite being dead. SE's way of telling the Battle of Cartaneau will be through these events. If Louisoix were indeed alive, he would have atleast said something. He was never a silent hero, he was the leader of the Circle of Knowing and the Archons. Also we would have access to the Echo, potentially, and be able to witness the Battle of Cartaneau through his own eyes. Instead it's merely a projection, both Louisoix and Van Darnus "know" who we are based on their memories. It's similar to how the characters in XIV had forgotten about us 1.0 players because of the distortion of the aether, probably due to the spell Louisoix used, sending us away and manipulating the aether to save us.
