Just go for VIT.
You can reconsider and change once you're about iLv90, depending on how comfortable you feel, but that's about it.
30 VIT will go a long way in helping you survive through content as you gear up.
It's pretty certain it's 30 vit. Someone here could probably write some long silly essay on vit vs str, but long story short, it's just vit. Besides, you would want to do something like what you see in my signature.

It's not helping your healers, your DPS in Defiance is going to be horrible regardless of your allocation, and there's no point until T5 where you're basically used as a DPS with a lot of health (if OT). Until then, 30 VIT is well worth the investment.

Pre-2.1, I attributed STR for most fights since WAR was forced into Offtanking more often than not, and getting 300% back on IB could also justify going the higher-damage path. However, with the 2.1 changes, VIT is definitely the way to go.
Spec pure VIT. Use pentamelded ilvl70 accessories if you want STR. Since you have over 8500 HP with food while using ilvl70 accessories, my general recommendation is to go that route and forgo ilvl90 fending accessories altogether. That will give you superior mitigation and damage in exchange for 450 raw HP. If you absolutely must have more HP, throw on some ilvl90 fending accessories. Either way, spec VIT. Only reason you would ever spec STR is if you are only doing farm content with low damage output or rare low-damage pure OT role.
Absolutely, under no circumstances, should you ever spec STR while wearing ilvl90 fending accessories. If you do, it is wrong.

While Full STR is fun when seeing big numbers in 4man Dungeons, its best to Go Full VIT for the Greater Good. Going Full VIT is a Safer Bet as it adds More Effective HP to you, espcially when your use your Defensive CoolDowns. Also, When I was Full STR, Alot of Times when I would Off Tank, I would inadvertently pull off the Main Tank even if I wasnt use BB combo. Espcially since I was Crit'ing 1100+ Inner Beast and 900+ Storm Eyes

Not entirely true. While Gryphonskin/Rosegold pentameld (even just VIT/STR capped) is a better trade off than 30 VIT for 30 STR, it's more cost effective to go with the latter. It's fine to go 30 STR with full fending, it's just not as good as GS/RG, BUT it won't cost you time/gil for the pieces as well as the materia. Also there will likely be even better DPS crafted accessories in 2.2 which will likely be better to spend your gil on.
If you can afford GS/RG with materia without bottoming yourself out, though, then it's worth it.
How exactly is farming 10,000 seals for resets faster than using the philo you otherwise already have from capping myth each week? I have not only a set of i70 melded accessories for tanking, I also have every piece of i70 healing gear made plus two more DRG pieces, HDS legs, and 3 relics, plus a few other DL pieces I've bought (tank hands, ring). I'm about to make 2 more MNK pieces and a fourth relic. I'm probably nearing a total of 30,000 philo tomes collected. Materia is pretty damn cheap now, too. You can buy all the necessary materia for around 100k (right now, cheapest meld is BD4-VIT3-VIT3-BD2-VIT2 on my server). Instead of spending 4 hours collecting seals, do your daily story run for 300 tomes and 5000+ gil in 30 minutes. Sell the tomes as mats and you're earning 20-30k gil an hour.
