Hi Guys,
Instead of being able to see more when I, say, go into fullscreen mode, everything looks stretched.
Is there a way to fix this? My resolution is 1920x1080

What's your monitor size? It's possible it's not 16x9.
Make sure it's at highest resolution while the aspect ratio stays 16x9.
Are you playing on a 32" TV? It could be the way the TV needs the display output to have "overscan", what GPU are you using? What kind of connection? Is the desktop displaying fine and fill the whole display panel?
Yes, the desktop displays fine and I'm using a tv. I have two 660 Ti's and it's an HDMI connection.
I ended up just resolving this by figuring out how to make the window fit my screen rather than going fullscreen.
For reference, though, can this game properly utilize 3 monitors? I am planning to grab a few soon.
You'd probably be better off using nVidia Surround Vision or something like that if you want to use multiple screen, and run fullscreen. However running in windowed mode might not giving your the best SLI performance (?).
Are you in Windowed mode?
CTRL-K (i.e. System Configuration), click on the topmost button in this new window, 'Display Settings' (it should be showing up anyway, by default).
Under Screen Mode, change to 'Windowed'
Now on the left side, click on the mouse picture / Mouse Settings and enable 'Allow Resoluton Changes via mouse drag.
Go back to Display Settings, under Resolution, pick a preset (ANY will do, but it's better to pick one that will make FFXIV occupy a small box on your desktop, i.e. pick something smaller than your desktop resolution)... then click on the 'Maximise' button of your windowed FFXIV, it should fill your entire desktop with no stretching issues.
Now you can switch to fullscreen or Borderless Windowed/etc... or stick with this... and use your mouse to resize at whim.
PS While yer here, I'd advise locking the frame rate to 30 or 60.
