Thank you everybody for your great answers! I'm going to try and find out why I haven't finished my main quest line.

There's no bad way to go about it. Once you've completed your gladiator level 30 class quest, you will receive the one to become a paladin and be infiormed that you need conjurer at 15 for it. The game makes no mystery about such things. You can get your conjurer levels beforehand or wait until you need them, either way works.
There isn't really an overall character level in this game, just separate levels for each class that you've unlocked. You switch between classes by switching your main weapon or tool, so for instance whenever you have a sword equipped you're a gladiator, you're whatever level your GLD class is at, and any* XP you earn goes towards advancing your GLD class level. If you switch your equipment to hold a Conjurer's wand, then you become a conjurer and your level is whatever you've raised CNJ to, and so on. (You won't be able to equip a Conjurer's wand however until you unlock the class by doing a quest at the Conjurer's guild.)
Since you change levels when changing classes (and besides, a lot of equipment has class restrictions as well) you'll usually need separate equipment for different classes. (Classes that are near the same level and have similar main stats may be able to share some equipment though, especially at low levels.) So when you go to unlock Conjurer or any other new class, have some level 1 armor on hand to wear.
Jobs are a little different. A job is basically a specialist version of its base class. So a Paladin is still a type of gladiator, both Scholars and Summoners are types of Arcanists, and so on. XP goes to the base class and its associated jobs share the base class's level.
* There is one exception to the rule that all XP earned goes to your current class. Once you've joined a Grand Company, if you have any crafting or gathering classes unlocked, you can do supply missions to give craftable/gatherable items to your GC. These provide XP for the associated crafting/gathering class, regardless of what class you are when you turn them in.
