Based on your criteria, healers have much more responsibilities than Tanks.
There is ofc few fights entirely up to Tanks such as Garuda EX for example but in general ?
They dnt really need to care bout anything else than WHAT theyre targeting and WHERE.
Healers in the other hand have to:
Watch theyre positioning for optimal Aoe heals or dodging purposes, watch for enemy moves, time their casts, watch over everyone's health, watch their MP.
Ifrit EX is the best example that comes to my mind.
PS: Its coming from someone who can play each of the 3 roles in endgame content ( WHM main ).
Titan EX: Tanks must switch at fairly precise windows. Offtank must grab mini-Titans and secure enmity within 5 seconds. Heaven forbid you get hit by those landslides with a sliver of safe zones to stand on too.Based on your criteria, healers have much more responsibilities than Tanks.

T5: Tank positioning of neurolinks. Calls timings of phase changes (holding DPS). Decides when or when not to jump inside Conflagrations. Places snakes perfectly in position for LB while dodging debuffs.
Healer: Dodge stuff (same that DPS do). Cure constantly (i.e. take an action every GCD; which everyone does). Manage MP. Real difficult.

Yeah... No. I have a tank, DPS and healer, and tanks do not have the most responsibility. That falls to the WHM/SCH. One run as a tank is more than sufficient to learn a tank's mechanics in a fight on everything I've done. (Haven't really attempted Twin since they fixed twisters though). A healer's role is far more dynamic. Until 2.1 content you didn't even really need to move as a tank on most fights, and trash was harder from a tank PoV than bosses. That should say something.
I don't agree that tanking is boring. I started as a WHM and leveled SMN. But I had always wanted to be a Paladin too. Taking is interesting because you have to manage the monsters and the players. It's more responsibility than most people think. Smart players will listen when you tell them what you plan to do next. A tank has to constantly focus on maintaining emnity, rotating abilities, attacking monsters and group mobs.
And for bosses that spawn adds, the tank is the one that has to bring the adds to one spot in most cases so dps can use aoe them. I think the hardest part of tanking is that some people work against you. Like dps attacking before you or before you've got aggro. Or healers spamming Medica II or Regen. I'm not saying they shouldn't use those spells. But I've had healers get killed because when adds spawned the went right for them and then the healer kept running away so I couldn't get aggro or even hit the adds. Every class has it's responsibilities. But if tank was the easiest thing to do tanks wouldn't be the 1st to be blamed (and healers 2nd) if there is a wipe.
What's a downer is that I'm likely to get criticized harshly as as tank than as an SMN. Seems like dps don't get ragged on as much. On the other hand as a tank (2nd healer) I get more commendations by far. Also some ppl seem to think there is only one way to approach a situation. Even if my approach is just as viable they say things like, just do it this way, "everybody does". Just tank, that's all you have to do. Hahahaha

ok jokes from The Office aside, I personally just don't like Paladins. Wars are ok but I didn't like the look of their armor/AF. I will most likely play a tank with a new class/job when it is eventually released.
And in terms of self-entitled players with poor attitudes, its always Tanks (or whatever job in the game is needed most). Typically (not always) people that choose the job that is the most needed are usually the ones with entitlement issues. Granted there are exceptions, but they are the exceptions that make the rule.
