Mnks take a major dps loss with no rear attacks. Drgs take a GIANT dps loss with no rear attacks. If they create a major fight where melee cannot rear attack at all then that is a serious issue.

Same way we knew how Diabolos's fight worked when SE teased it back in 2004. You can get a basic idea, but that's still obviously in development and SE is a fan of god mode unless they wanna show how hard something is by killing themselves on easy mechanics >.>.
I can't imagine, considering it's already been done with the tail of Toto-Raks boss, that it would be too hard for them to make the target a specific part of Leviathan (his face, yo) with everything else floating behind him and only really being for show. If that's the case, he sticks his head over the side just enough so the DPS can get behind it. Wouldn't be terribly difficult.
Of course, the fight could also work in a completely different manner too, sort of like the Copperbell Hard midboss; you don't directly damage Leviathan, instead you do something else to damage him.

Or hell, who says that Leviathan's back needs to be in the same place his front is?
Have you seen how long he is? Could well be head and tail are different targets and the tail always has the back facing towards the party from a different direction. It'd have some eventual tail swipe attacks while the head does most of the heavy damage.
He moves them around the ship, the tank tries to keep the head on him so he doesn't obliterates the party while the DPS focus on the tail.
