Games in general cater to all kinds of players specially so with Various difficulty levels to choose from and with the exception of some games none at all because they are already hard to finish. In example Dark Souls.Fixed that for you.
If you want something hard, go learn a new skill/do something worthwhile IRL. Games are for entertainment, and a majority of people don't find banging their heads against walls entertaining, thus games are easy. I'm sorry if you are in the minority, but that's how the cookie crumbles.
TL;DR go play another game.
Considering you said running 2 roulettes and Crystal Tower seven times was ONE DAY of playing, even if there were no artificial limits on gear you would have obtained everything within a week or two anyway. No reasonable amount of content can keep up with that level of playing time unless the content is made longer through more grinding, or we pay significantly more per month so they can make more.
I really just don't know what people in your situation want. The sense of entitlement from people who can/do play for 8+ hours every day for the company to cater to them is astounding, especially when the vast majority of their customers (who pay the exact same amount as you do) cannot and thus would be alienated by the things I've seen these players post as far as what they want.
Also if you don't play for 8 hours a day and can ninja pug CT 7 times as well as your roulettes in 2 hours, tell me what data center you are on because I'm transferring immediately.
I gotta admit having 3 extreme primals which makes the 3rd time I've had to learn a stupid specific pattern isn't content for me anymore..

this is what i really hate about the old mmo mindset.. the sense of entitlement only because of the time invested (rather than the quality of performance or skill)
if you really think that handling tedious logistics such as organizing 100+ people raid, and or stockpiling loads of pre-raid consumables (Brezs etc) and engaging in a 3-4 hr mindless boss fight makes you hardcore then im sorry this game is not for you.. nor would any current MMOs
I also admit thought that this game does a bad job at giving you content you absolutely can easily spank then gives you content which stail mates you until I find 7 other like minded individuals..
Even if you had the i95 weapon the world isn't balanced around you for you to want to explore it. Go zerg a fate yeaaaaah thats fun...Or you could do those 3 extreme primals which all lead up to gear that again begs the question why? What out in that world of Eorzea is dangerous that you would need such equipment?
I'm never bored with game because I have great FC that's always having fun.

If I had all Top gear in game? I pvp.
Pugs are cross server parties so it wouldn't matter if you transferred to my server. A roulette and CT takes less than 1 hour each (Total of 9 hours). I work mon-fri and limit my game time to 3 hours per week day and 10 hours per weekend day (unless I have rl stuff to take care of). Sorry that I want to play a game more than 9 hours per week mommy, but I'm an adult. I pay my bills, I am not in debt, I make a stable income, have a stable job, and have enjoyed gaming as a hobby since I was a child.
Now for the argument of "well if we didn't throw the mommy cap on you, then you would have nothing to do after getting end gear in 1-2 weeks." This should be the choice of the player. A player should be rewarded for willing to put more time and effort into a game. It's as bad as the government and socialists trying to invade all our private lives and run everything including how many times we are allowed to wipe our butt per times we take a dump.

Since I know this will never happen, I have accepted that and will settle for something:
Login
Group up with players
Gain Progression (exp, or level ups, or better gear)
Be satisfied with achieving the fact I have grown stronger in the game and feeling like it was worth playing.
