I'm not sure your point? Even if that was the case (it being terribly optimized) why wouldn't we want to know what the specs were for their demos? How were they 'optimally' running a poorly 'optimized' game?
Like most games with high memory usage FFXIV most likely catches OutOfMemory-Exceptions and unloads the least used content. It's okay to prevent using the pagefile but its not smart to limit the memory usage to a certain size. 1.8GB is just not enough for this game.

I'm curious what they did for their demos too, but I have a strong suspicion that what they showed off was running a custom client specifically tweaked for those demos.
