I think as FFXIV is undergoing this transformation it would be in SE's best interest to keep the current player base happy, are we there target audience no not really all the people who already left and the people who never played it are BUT that doesn't mean they should ignore us. Chances are if they change things and the feed back they get from the current players is positive then it will be well received by new players as well.
They haven't taken the service offline, and they even threw a few bones for you that they didn't really have to while waiting. They are doing too much for you considering the size of the playerbase really.

Also they should definitely keep the servers up as we all know of the problems they are having with server load. Lets say that SE takes it offline and does manage to create the ultimate FF MMO they fire the servers back up and oh dear they can't handle the potential millions of people trying to play, that would be a disaster.
Yes, it's in their best interests to have one server up to act as a test server. How does the current 500 players per server help them in any way?

It is a sad fact that we must all admit we are currently playing a glorified beta, however we need to utilise this chance to help SE design and build the best game they possibly can. If something is good we should tell them, if it is bad then we should also tell them. I am not saying they should follow our every whim but amongst all of the feedback given there could be that one little gem, that one idea could really help them to build a better game.
And like I said, an hour a month keeps the bad design decisions away.
