Accuracy is the only stat with a hard cap as far as I know. It's not actually "capped" by the game (which is why you can keep putting more points into it), but once you reach the accuracy cap for your job, you have a 0% chance to miss against any mob up through Turn 5. Thus, stacking more accuracy beyond the cap is entirely useless since having a chance to hit above 100% doesn't do anything.

For casters, 432 accuracy will give you 100% chance to hit all the way up to Twintania. For physical DPS, 472 accuracy is the cap. Summoners are a bit weird because you only need 432 accuracy for your own spells to hit, but your pet has a higher accuracy requirement (around 450, I think?). One thing to note is that not every monster requires the same amount of accuracy. You need 472 accuracy to have 100% hit chance against Twintania as a MNK, but that number is lower for turn 4, and lower still for turns 1-3 and primals.

On the other hand, you can stack as much crit, det, and spellspeed as you want. There are no hard caps for those attributes, or at least, none that we can reach with current gear levels. There are also materia caps on each meldable item, but that's another mechanic altogether.
