    You actually don't defeat them. When they get really low on health they stop attacking and you can't attack them anymore. Then you just use the item they give you on the enemy (Item is "Spring Water").

    "Search Little Solace for tipsy sylphs, and splash water on them after weakening them. 0/3" - From quest log. Even tells you to splash water on them after they are weakened.
