I wish we could. Apparently it was possible at one point during beta but had some bugs and the feature got removed rather than fixed. (I thought I'd seen a dev post somewhere saying they were hoping to fix it and add the feature back in, but I can't find it now, so it's possible I'm mis-remembering from one of the player posts I've seen requesting it.)
It was indeed in the Beta right up until release, there was a checkbox that allowed you to decide which quests were displayed. A lot of people were surprised when it went to release and it couldn't be found anymore![]()

I took on 6 quests and even though it kicked one off the panel, the green target area to complete the quest was still active on the map, I dont know how many you can stack though
There's no real limit to how many you can undertake at once. My advice would be to always complete the quests you have acccess to inside one area before moving on to the next area. This way, you'll never get overloaded by quests. The questline is actually very well structured so if you follow the main story, you'll visit all of the world and be exposed to pretty much all of the sidequests.
Also, just hit 'J' to bring up your journal if you want some info on quest objectives for a quest that isn't on your main screen.
