This is actually a reasonably controversial topic still. Obviously you want as much MND as you can possibly get, but people tend to disagree a bit on secondary stat weights. Crit is very important: a lot of people weigh it as the most important secondary stat, while others rate Determination higher (honestly, I don't really think this makes a huge difference, you just don't want to neglect either of these--that being said, I do go for Crit first, and so far this has paid off). If you're planning on keeping your bonus stat points in INT for your SMN, though, you might want to consider balancing slightly more toward Determination. Spell Speed is considered to be third by most people. It's good to have, but not as good as Crit or Determination. Also, never turn down PIE--SCH have fewer MP problems than SMN, though, and if you follow those other stat guidelines you'll be fine for MP.
BiS, of course, changes depending on what stats you want to prioritize, and there's some argument about whether or not it is worthwhile to keep a lower ilv item (thus losing out on a few main stat points) to keep an item that has a high amount of Crit when there isn't one with Crit at a higher ilv. One example of this is the Mog Book vs. Omnilex [Zenith] (the Allagan Grimoire is obviously BiS, but what do you use until you get it?) or Royal Shoes vs. Allagan Boots of Healing. I personally think that having more MND is always first priority, so I go with the highest ilv item I can possibly get, even if the stat allocation isn't the most optimal. The only piece on which SCH are totally screwed and have no options is the head. Both the Allagan Circlet and the Argute Mortarboard have the same badly-itemized stats.

If smn is your main, and 9/10 times you go smn and only have sch as a backup job, then by all means, 30 int.
If you play them 50/50, you can either go 15/15, which will mean you aren't top in either and isn't recommended for coil, or you can dump into vit for survivability.
If you really love smn, you will go 30 int.
Best to stat reroll when you can, but unless your sch gear is gimptastic the -30 mnd will hurt but not kill you for most things.
General rule of thumb for SCH gearing: always i90 first. Whatever gear you use, make sure it is i90 or above. The amount of crit you can get from Darklight Pants, Royal gloves, or Spruce patterns is not enough to make up for the lost Mind.
Also, make up your mind. Are you going to be DPS or Healer? I know there's this new and creative push to SCH putting 15 into Int and 15 into Mind so they can maybe switch to Summoner. Just stop. Choose a role. Either DPS or heal, not both.
After that, you have to decide on Crit or Det. Statistically, these two secondary stats will work out roughly equal (Crit gives a slight, statistically insignificant increase). Crit may give you larger heals by way of critting, but Det will give you sustained. Both have their values; both have their drawbacks. If you go Crit, most of your equipment will come from tomes. If you go Det, start praying to the RNG gods because Coil is entirely too giving with DPS gear over healers.
For crit, get all the myth pieces pretty much. For det, you'll have myth legs, feet, belt, Coil head and jewelry, and Garuda ring and Ifrit bracer.
The posted BlueGartr information is good other than the helm. The allagan helm is no longer crit.
And ignore the Eos/Selene nonsense. Both are roughly equal as well. Use whichever you need for the fight.

SCH can be tailored to situations imo.
If you are going to be healing with a WHM most of the time, you can safely get crit to 15% then focus on mind, if you are going to be solo healing alot of the time mnd before crit.
iLvl doesnt mean jackshit in my eyes, while most of the time there is a MND and Crit option, if you happen to find an item which is a grade down from a crit option and you need the MND go for that. It is more about making sure you are hitting certain stat caps to suit your needs.
Fairy wise, again this is definitely dependent on what is needed. If you can manage healing on your own without Eos buffs at all, use selene and leave her on sic, she will alternate dps buffs.
In the end if you want to use SMN and SCH, I suggest gearing up in BIS and having a least one extra MND piece if you go for crit build and then putting points into VIT.

BiS doesn't matter that much anymore. A well-played SCH with other well-played PT members can get through anything in the game with relic+1 and an assortment of gear that is around ilvl80~. Anything else is just comparing who does the biggest heals.
So for what truelly matters, go with whatever gear gives highest MND first, then go for crit hit and determination in secondary skill.

I like variety and prefer healing as a scholar and so that's why I'm gearing that class up now. It's also useful since I've gotten all my drops for t1-t2 as a summoner, and i can do them as a scholar instead and dps t4 onwards. I have solo healed titan hm, so i can help people out with that when they need help. Versatility is the flavor of life so I'm going to continue to do both

Okay, thanks for all the feedback guys! I wasn't going to change my stats so sticking with 30 int, and my summoner is continuing to be my main, and thank you for the armor suggestions, because I was seriously considering going full crit.
