You get shroud of saints later (which I agree is subpar as a mp pool regen tool) so if you're disciplined about using your skills only when they're needed, then you won't need the extra points in PIE to fix your mp pool.

I distributed some of my attribute points to piety, mind, and also for vitality. Once you get shroud of saints and divine seal, you can manage your MP a lot easier than before, so not piety is not as big of a deal, but mind is good for cure potency, and also the vitality (I think)
It really depends on your management of skills. MND which is your main stat is always the priority. BUT, if you find yourself not managing your skills, even with Shroud of Saints, then a PIE build isn't necessarily harmful. I had a WHM I healed with in Coil for awhile that used a 30 stack PIE build because he felt casting (2) Cure I's (which is a higher potency than (1) Cure II and the potential to make your Cure II free) took too long in most cases, so he would spam Cure II on say a fight like Caduceus in Turn 1 where Healers and Tanks are split up, which by the end of it, left him pretty tapped out and was screaming for a Mage's Ballad.
20 MND / 10 Vit is also common, an alive healer is better than a dead one.
i changed to all mind attributes, feel my hp and mana is suffice for all the content. Incase i carry x-ether pots that help a lot in mana if i need, otherwise shroud.
I ran with 20 MND and 10 VIT for a long time until I felt comfortable with my HP. Your allocates are all up to you.

I've put all my points into Mind. Shouldn't need points anywhere else, especially Vitality. Tanks are to ensure mobs aren't raping the healers, and gears will help boost your vitality. I'm currently over 4k health now as WHM and that's without having any points in Vitality.

I did 100% mind. That also gives you some decent DPS in cleric stance. The pie and vit you get from gear should be adequate. Smart use of shroud and you shouldn't have mp issues very often. And shroud's enimity reducing factor helps keep you from getting hit as much. But mind will ensure you are as powerful as possible at your main responsibility... healing.

I allocate everything to MND. I'm not supposed to get hit in the first place and the health I need to get through Titan can be achieved through equipments.
EDIT:
Just saying that, in most parts, I don't need Shroud of Saints. I only use it during Holy runs and Primals. I primarily use it to regen MP, and use it once I reach 80% when I expect intense battle. It won't keep your MP full, but neither will a few points of PIE
