I think you misread the OP. He wasn't asking about the state of his undeath, but rather his state of mind during those five years. He did think he was undead, so, naturally, he would have done as the zombies do and eaten innards.

Maybe. It's never touched upon. Though, during his state of amnesia, he did retain many of his mannerisms and gentleman-like qualities, so, like Moose said, he may have just kept a good front when around his zombie underlings.
