Nothing better than +VIT for me. I seen some PLD with some insane Health.

There hasn't been any other worthwhile stat to put it into as of yet. VIT simply helps you do your job better: staying alive to bother the enemy so it keeps your allies alive.
STR is very meh, as you're not out to deal damage. One can argue that more damage = more enmity, but since most of our enmity comes from Combos and actions, rather than pure damage, it kind of loses its effect. STR also helps with the amount of damage blocked, but given the infrequency in which we do block, it has less-than-admirable returns.
DEX would be very useful to put points in to help is with block rate if we were given a halfway decent DEX score to begin with. It simply doesn't add much to something that is hardly there to begin with. Accuracy also litters our gear and most tanks wind up capping out on it for their current content very easily anyway.
VIT and STR are the only allocatable stats that make much difference for Tanks, and you'll want a LOT of VIT.
Allocate all your points into VIT, then later on if you want to have a gearset that is STR-heavy (Gryphonskin accessories, for example) for certain types of content, equip it.
You get MUCH better returns from Speccing for VIT then equipping for STR than the other way around.

It should be noted that Patch 2.1 increased Tanking stance enmity gain substantially, to the point at which I'd now not recommend a Tank ever bother actively trying to get any more STR in order to "keep enmity better".
Additional STR really now boils down to: 1) Increased Block Chance/Strength and 2) Extra DPS.
At endgame the most efficient trade (melded Gryphonskin accessories, trading 25 VIT for 45 STR/45 DEX) gains a PLD an average of roughly ~1% extra damage mitigation over time (applies only to blockable damage) at the cost of ~5% Maximum HP, and is a net loss in "eHP". Basically it may reduce your fight time a tiny bit, but it won't help you Tank noticeably better now.
If you're overly geared, go 30STR.
If you're a weakling, go 30VIT.
What everyone is going to tell you is - DON'T GO STR UNLESS YOU REACH THE NEXT TIER OMGOMGOMG!!!
As a WAR I went 30STR 90% of the time and never regret it. Tried 30VIT for speedruns (very useful) but swapped back to 30STR after 2.1. With enough gear you can tank anything in the game and more importantly, do a lot more DPS.
People say tanks shouldn't focus on DPS, but that's stupid if you're already able to reliably stay alive. Everyone who can contribute DPS should contribute DPS whether it's 1% more, 5% more, or whatever.
With the way gearing is right now, everyone has quick access to respectable gear that will allow you to go 30STR for most content. Unless you're looking at T5 very soon, I wouldn't even bother with 30VIT so long as you've got 5k HP as a PLD and 7k HP as a WAR. Learn to use your cooldowns and you'll be just fine. People were clearing T1-4 with much less gear than most people have now. You'll be just fine.

If your PLD I find most don't pay any attention to you till your the last one standing, in such case STR might pull out ahead for you.
