Is there a current list or database of which element a mob is weak to? I've searched around but I've only found incomplete one posted at game release.

i haven't found one yet but i would like one to
I would also like to see that materialize but I have the feeling that many of the people that started those endeavors have since stopped playing.
Look up your mob on YG. Check what shards it drops. Mobs that drop 1 - 6 shards of an element are aligned to that element.
I've seen mobs drop more then one type of shard or crystal on a regular basis. Some mobs I just can't get the right nuke for. For example with coblyn, right when I researched and saw the type of shard/crystal it tends to drop, I use the corresponding strong element against it and get meh results. I do the same thing with a Puk and my starting nuke can knock off 40% of it's life.
I've visted YG but it's data tends to be wrong. I guess data hasn't been updated over all the patches.
I have a full list, but unfortunately for you guys, I'm not sharing the whole thing. Since the link I have is to an editable document that was shared in a private section of my LS website, it wouldn't be fair to the author. However, here are a few:
Monster/Weakness/Affinity
Hippogryph-Earth-Lightning
Gnat-Earth-Lightning
Cactuar-Earth-Lightning
Wolf-Earth-Lightning
Jellyfish-Lightning-Water
Giant Crab-Lightning-Water
Eft-Lightning-Water
Slug-Lightning-Water
Ahriman-Water-Earth
Coblyn-Water-Earth
Doe-Water-Earth
Antling-Water-Earth
Bomb-Wind-Fire
Goblin-Wind-Fire
Boar-Wind-Fire
Opo-opo-Wind-Fire
Revenant-Fire-Ice
Imp-Fire-Ice
Wight-Fire-Ice
Buzzard-Ice-Wind
Flytrap-Ice-Wind
Dodo-Ice-Wind
Puk-Ice-Wind
There is a rule to what element (and its weakness) a mob is depending on the shards that it drops.
Each mob will drop 3 different shards - you can check this on YG. Now look at the elemental wheel :
----lightning----
Wind------Fire--
Water-----Earth
------Ice-------
Lightning>Water>Earth>Lightning
Wind>Fire>Ice>Wind
The 3 shards that it drop will always be adjacent to each other on the wheel. The element of the mob will be the middle of the 3 elements and so you can determine its weakness.
For example the puk family will drop wind, lightning and water shards regardless of what type of puk it is. Match these to the wheel and you will see that wind is between lightning and water, so puks are of wind element. Their weakness will be Ice.
There are mobs that drop 1-6 shards of multiple types , eg puk : http://ffxiv.yg.com/npc/cellar-puk?id=3100109 , so this can't be right.
Applying this rule gives this list. Though I've always had my doubts that Efts are water element since they use lightning attacks...perhaps your LS had gotten the info this way.

I've been SP grinding on them on teams and I can verify that with a Walnut Wand, Lightening does the trick with them and it seems to do the most damage. But I also found these mobs are perfect for fully DoTing. Once you're done, you can drop a Thunder II on it but most of the time the Eft's health is melting away very quick. Even more so after reaching R37 and my second tier DoTs started landing most of the time. Depending upon the rank of the Eft and my party with 2-3 others, the Eft would perish with 3-5 CON dots and 1-2 THM dots.

Bombs, just like in FFXI, are weak to Fire. Not sure about any other element, but Fire for sure, I've tried and they barely ever resist me.
Unfortunately YG is not infallible and as it's not a wiki that we can update ourselves it will never be as good as the FFXI wiki was. There are mobs that drop 1-6 shards of multiple types , eg puk : http://ffxiv.yg.com/npc/cellar-puk?id=3100109 , so this can't be right.
That page is wrong, mobs will only drop 1-6 of one type of shard - the element they are alligned to. In the case of puks, that is Wind and you want to use Ice on them.
And yeah bombs are the exception as in all FF games they are weak to their own element, Fire.
