Okay, I get that you can avoid sleep with medicine and proper gear. But what about positioning of melee classes? There is no way they can execute their skills from the flank or behind. Just as they can't hit running targets. I' havent been able to try it out but I'm still curious.

I don't know if it work in ARR.

In 1.0, if a monster (mostly a Dodo) sleeped a party member, we woke him up with heal.

yup. The recipes aren't that complicated either.

I played a good 25 or so matches as a Monk and I managed to land the vast majority of my skills from the side or behind. The responsiveness is really quite good.

Unlike FFXI's stupid system where you could inflict yourself with status ailments, poison pots in ARR are used on the target mob. It's supposed to be a little extra damage at low levels.
