You don't need to do all the side quests to progress main story, though!(the main story quest has a specific fire-ish icon on them if I recall correctly) the Job quests are short and easy enough to do, as well, and they give you extra abilities that are very useful

Well, yes and no. If you already have the Job unlocked from 1.0, it will kind of double-up your Job crystal, however, as class/Job abilities were redesigned in ARR, a lot of abilities were either scrapped completely, or replaced, and a number can only be unlocked by undertaking your class and Job quests. So if you want the abilities at least, you'll have to do your class and Job quests. And yes the abilities you get are very useful, if not essential, for playing your class/Job's role.
As well, SE changed things from 1.0 in that new players no longer start the game with the Armoury System unlocked - players have ot unlock it by doing their class quests and then signing up with the guild of the class they want to change as before they can then equip that weapon to change class to. As a 1.0 player though, you'll have access immediately to any classes or Jobs you have experience in. Any classes you didn't level though (which had no exp in), have to be unlocked like a new player I'm sorry to say.
Only the main story quests, lv15 class quests (for a skill), level 30 class quests (also for a skill) and the first job quests (to get gear set +1).
If you do the job quests, be sure that you have the AF from 1.0 with you. Or you end up with double AF gear.

Yeah, you should to do the class and job quests since you get skills from them. You need to do the class quests (levels 1-30) to get access to the job (if you don't already have it, I'm not sure if you keep the job or not on legacy servers if you got it in 1.0). And you need access to the job quests to get the job skills (you get one every 5 levels, 35-50) and the AF1 pieces for the respective job. Main story content is required to get to endgame, so no access to your relic weapon, hard mode primals, etc. until you beat the game.
That said, all the class and job quests are short, and the main story can be completed within a week or two (possibly even faster) depending on how fast you go through it and if you pay attention to the story or not (since you're already level 40 it should be pretty quick). So if you just want to burn through the content to get to endgame that is an option.

Yeah its been boring alright :/......But I've watched a few streams and might I say its motivated me Im about out of LL hopefully will be able to grind it out and get some where decently entertaining....I've also noticed alot of graphicss fixes etc and its been awesome being back and seeing how this game should have been during the first release :P
I'm also a 1.0 player and TBH this "new" story IMHO is really boring and have a lo and i mean a lot of miscellaneous quests, that doesn't make sense.
You'll see what i mean when you are preparing for garuda and titan.
