I think it's best to put all in strength. 5 Str is the different between a ilvl 70 and ilvl 90 piece (hands, gloves, feet). The extra vit isn't worth it, though you can do that for Titan if you're willing to change it back after.
Otherwise, I don't recommend any in vit.
With decent gears, monks shouldn't have any problem with HP at all. So yes, put it all in STR, and 5 VIT won't save you really.

All in STR. If you need health for some reason there is fists of earth.
I put all my points in str and mix vit accessories if I'm having a bad day with dodging / fists of earth or wind.
I'd vote full strength.
Splitting out of strength is something you can do for Turn 5 content. That usually means your gear is already very strong. The extra vitality is very good. The longer your are alive the more damage you will do.
If you're not at the point of tackling turn 5, then I would say its not necessary yet to move all your points out of strength.

If you have good gear for turn 5 I see no point to gaining more vitality for it. Have plenty of HP for all the mechanics there, not to mention when you are progressing you will want all the DPS you can get.
The gear you will get on your monk will give you plenty of Vit, you pump all into strength.
