While I understand that each DoL and DoH kinda rely on each other, which in your oppinion is best at making gil or atleast useful gear/items?
I plan on picking up a craft and leveling it, so every input is greatly appreciated!

Culinarian is of most use, as it provides the only sustainable consumable resource.
As a consequence, Botany and Fishing to provide for Culinarian
All others are near pointless in this game as it stands.
If you want to be able to provide for yourself and your alts, Weaving, Leatherworking and Blacksmithing will get you the largest spread of items across all the Disciples.
If all you're looking for is gil, there is no one answer. Diversification is the key to a healthy income, because anything that stands out enough to be considered lucrative is going to be hammered by the masses until it isn't.
Actually sells, or is just priced high? On my server, that stuff is priced for 500K-1M, but who has that much money, other than other crafters or farmers? Thing is, if you're starting off with crafting now, it's going to be some 1-2 weeks to max any one craft (depending on available leves and money), and by the time you gear up your crafting class enough to be able to reliably punch out HQ 2-star gear, you'd have been better off simply buying ilvl90 artifact gear with myth tomes in all but a few cases. If you're looking to buy any of this stuff, you'd be better of saving up myth tomes for the amount of time you'd need to save up enough money to buy said HQ 2-star gear (unless you're farming like crazy). The way the crafting is at the moment, you're only catering to suckers, and or one-off customers, who will slowly dry up.

Weaving is quite good actually, making vanya gear. Though you would require other cross class skills to make HQ vanya to sell, and it is hard to tell how the market will end up with 2.1 coming our way.
On Behemoth, there was a point were Vanya became so cheap that making it myself would be more expensive than buying it off the Marketboard. So I went ahead and just bought the hat and the robe.
Still make some money selling pre-mats and levequest items, though.
everything except alchemist lol. u can use the gear and accessories from crafting to spiritbond for cheaps, culinarian for food
Thanks for the input guys, I was looking at alchemist and none of their crafts are useful for what I need (no cordial recipe)
Culinary seems fun... but the ingredients are too much!
Weaving seems to be simple enough as a starter craft and is somewhat profitable.
I do have carpenter but its not profitable on my server.
