There's no caps as far as I know except accuracy which i just "until you hit 100% on everything in the game" whch is around 440 for mages. VIT scales in a linear fashion (around 14.5 HP per 1 VIT at level 50) and PIE is similar but adds less per point (around 8 or so per 1 PIE).
MND and INT are similar but I believe at certain tiers they increase how effective the stat is (can't remember where I read this but I remember it was every 100-ish). I think that's why things like mega potions of strength/int etc. give you a more noticeable damage increase than you would think, because they can push you into that next tier.
I wanna know when the soft caps starts at what number?
There isn't one or it'd have been published already and there would be dozens of class guides centered around gear/stat caps.

For the primary stats: STR VIT DEX INT MND PIE. No soft cap has been discovered by folks. The full benefit of stats appears to continue even with a full set of the highest stat gear, then stat allocating towards the stat, eating food (if applicable to the stat), receiving the party stat buff, and drinking an HQ stat boosting potions. If there is a cap, it's beyond the reach of the resources currently in the game.
For the secondary stat ACC, this appears to be depend on the class. As someone earlier in the thread said, around 440 ACC appears to give you a 100% hit rate for casters and around 480 ACC for melee to reach 100% hit rate.
Now Items? Items have stat caps.
