That's largely true. The cross-class abilities help immensely and are a good encouragement to level everything on the same character.
Some players do make alts though. One reason is to allow them to farm and gather more mythology tokens for different classes/jobs. This in turn essentially lets them gear 2 or 3 different jobs simultaneously, even if they can't share between the chars. Others make some low level characters to explore the different starting story quests for the cities. And some just want different looks for specific classes/jobs. It is essentially up to you how much work you want to put in to a single char. I've made a couple extra chars to play through different storylines and change the voice acting to different languages.
Didn't think of the voice acting thing. Now I wonder if I can change the Voices to Japanese but keep the English written dialogue. XD

It's implicated, but I'll just emphasize that if you level several classes on one character, you can not gear them all up at the end, since you can only collect a limited amount of currency each week to spend on gear. The currency you get is per character, not per class.
Well. You can. But if you want to gear up in any sort of efficient matter, it's not really a sensible option compared to just creating a new character for each class you want to gear up. Every 2nd to 3rd week you can buy one armor piece. If you spread the armor pieces out between different classes, it will take an extremely long time for one to collect a full set. You can only enter raids once per week as well, which essentially means you have to pick one of your classes to raid on.
This is not a concern to most players however, as gearing several classes requires a fairly large time investment.
If you've played other MMOs and like to have alts you can gear up in current raids and dungeons however, you should seriously consider to create a new character for this purpose. As Anova said, that means you get to collect currency and raid as you please on your alt.
You can. It should be under configuration, near the bottom of the tabs. I forget the exact term though.
