Here's why you wouldn't: go through all those story mode dungeons again, with all the long queue times. Especially as a DPS queueing for, say Sastasha. When your first class hits level 50 too, you gain some EXP bonus when levelling another class, proportional to the difference of levels between your current class and your highest leveled class.

You can have every class on one character, but the current Coil lock out system kinda forces you to focus on one class at the moment. You are still beginning, but as a heads up, the current most difficult end game dungeon has a weekly lock out on it. This means once you've cleared it for the week, you cannot repeat it, until the next lock out reset, which is usually 3 PM (GMT +0). This also means that, if you were to clear it as a Dragoon, you wouldn't then be able to switch to a Monk and enter it again, since the lock out is based on character. Hence why I mentioned why people might want to make multiple characters - just to run Coil multiple times. There's also a cap for Mythology tomestones at end game (currency to buy a different set of end game gear), so you'll have to choose a class you want to gear. If you're not too bothered about end game yet though, go and have some fun trying out different classes. It's been a pleasant experience for me experiencing different classes. Also, having 1 of each tank/healer/dps in a class gives you something different to do in dungeons each time.
Is coil something that's puggable and doable in a short ammount of time or do I need a guild static and it will still take us three hours? if its something I can do here and there throughout the week I can see making multiple toons since it would only be a little extra work to level them all up, but if its something I'd need three different shcedules for and 3 hours a piece I can't say I want to be raiding every day for 3 hours.
