These are two of the main reasons I see people doing so.

If you choose the multiple character route, you'll also level significantly faster as well, as each character is building it's own rested exp while offline, as well as also having separate leve quest allowances.

A lot of people say "teh gaem lets u do it all on 1 toon so do that", but just because you CAN do it all on one character doesn't mean you need to, or even that it's the best choice.

Is coil the only raid or do most guilds do Coil night #1 X night #2 and Y night #3?
Most groups do Coil on the hour of the reset. Some groups choose to do it on other days when other members are available as well. Some also prefer weekends.

Dungeon instances are managed via their Duty Finder server space. As long as there's space for your group to enter a dungeon at that time, you can go in with your team whenever you like. This also applies to all other instances, not just Coil.

In some way the initial dungeon grind would put some people off. For example, I for sure would not want to repeat being stuck in Sastasha again. Could be made easier if you have an FC on your main character, and you are able to find like-minded people who'd like to start a second character with you though.

Also, most of the time, you'll end up grinding for multiple classes anyway, regardless of how many characters you choose to play. Cross class skills seem to be really important. For example, just because I want to create a second character who is going to be a BRD, doesn't mean I can choose to ignore leveling PGL and LNC to their respective levels for the cross class skills. You just have the liberty of leaving out crafting classes on your second character onwards, unless you don't intend to craft at all on any of your characters (at which point, leve allowances are really not important anymore - I really don't see anyone using leves outside of crafting/gathering).
