    I'm wanting to get into the unofficial rp servers. Any idea if Balmung or Gilgamesh are gonna open up to new people on the server?

    Check the character creation post. It gets updated daily and at certain times of day severs are restricted from new characters and other times now. Right now all but Hyperion is open for new characters. Just check it before making your char:
