Is it viable to wear a matching set of armor (head, body, hands, legs, and feet) and still do everything a paladin needs to do? I'm a little OCD about how my character looks, but I definitely don't want to lose out on stats, either.

Yep! Only trouble is that if you're doing Coil you'll either need to wear full HQ Gryphonskin/Rosegold accessories for the accuracy or snag some Allagan jewelry. Unfortunately, only the Hero's ring gives accuracy, so with every other piece you replace with Hero's you'll be losing a good chunk every time, eventually putting you below the cap for every turn. GS/RG is perfectly viable if you're having bad luck, though, so the only thing you'd need to worry about is how much time/effort/gil you want to put into that.
But yeah, obviously there's min/maxing where you'll get more Parry out of x and y piece (see: Allagan Flanchards), but honestly it's really pointless as most secondary stats don't add up to much difference in the end. You can clear all content without min/maxing those, the only thing you need to worry about is your accuracy if you plan on doing Coil which can be easily fixed up.

-Average Block mitigation = 6.79% (24.74% Block Rate with 27.45% MIT)
-Average Parry mitigation = 3.80% (25.12% Parry Rate with 15.14% MIT)
-Total Mitigation = 10.59%
Alternate BIS:
Parry 616 ACC 478 Crit 378 DET 219 SPD 352
-Average Block mitigation = 6.83% (34.72% Block Rate with 19.66% MIT)
-Average Parry mitigation = 3.79% (25.05% Parry Rate with 15.14% MIT)
-Total Mitigation = 10.62%
Basically, earn MIT0.03% + 22CRIT in exchange of 2ACC/11DET
So, for one, at full i90 your parry stops 24% per parry, not 15%. So, if you had a chance to parry all incoming attacks, it would actually be a little over 6% average mitigation.
Secondly, parry check is preformed AFTER block check, so increasing your block rate lowers the number of attacks you can parry. This means the onion shield actually lowers your total parry mitigation, which is pretty bad since your parry mitigates more than your block does with the onion shield equipped. (Again, 24% vs 20%.)
So, with Zenith/Allagan: You block 24.74%, leaving a little over 75% of attacks you could parry. Multiply by chance to parry, then amount parried, and poof: 4.36% damage parried. + 6.79% from shield, 11.15% total mitigation.
Onion: You block 34.72% of attacks, leaving 65.28% of attacks you could parry, all said: 3.94% damage parried. 10.75% total mitigation.
You lose 0.4% by switching to onion shield.

There's little-to-no theorycrafting needed here until the next major update to change things. The info in here is already solid and the best people can get for their pld's.
