i would like to be a bug catcher, that would be cool or an archeaologist, excavating nodes for monster bones and fossils.
herder/shephard - gathers from mobs (not all mobs have to be gatherable)
furs/meats/bones
aetherist - gathers from aether points (new gathering nodes)
energies/crystallized wildlife/altered ore
transmuter - transmutes items with magic from trasmutable spots (new gathering nodes)
easily able to make a wide range of item types here
SE could definitely add more DoL!
Entomologist... except that's specific to insects (6 legs) and excludes spiders. Arthropods include insects arachnids and crustaceans. There are lots of arthropod monsters, items, and decor already in the game. There could be interesting potential for crossover with battle. Speaking of which, I would like if my botanist had some special ability against plant type monsters!
Archeologist would be an awesome addition, could add nodes that revolve around Aalegan technology or any other lost civilizations from the lore.
Could easily tie into an engineer type doh as well.
Being able to "gather" materia would be awesome.
Chocobo Breeder to allow for different colors and sizes of chocobos. I don't think they should have any advantages over current chocobos, but maybe have the different colors level the different choco skill trees faster? Like, white levels Healer faster, black levels Defender faster and red levels Attacker faster.
Have a combo class for Botanist and Miner be something Archeologist or Paleontology related where you would gather bits of old civilizations for new recipes for other craters and items for housing.
Chemist that takes alchemy and botany that creates mixtures for use in battle like bombs and salves that share a timer with potions
Or maybe they could just introduce specialization to existing crafts that allow people to specialize in different aspects of their craft. Like Carpenter that specializes in furniture, or weapons, Blacksmith that specializes in different types of weapons, Armorsmith that specializes in different types of armor (or BSM/ ARM could have new high level materials that would require you to specialize in to craft), etc...

I would also love for a community manager to give their opinion on more DoL classes (not official, future patch, messages), because I think there could be a lot of creativity in this area. Such as the Aetherist or chocobreeder, but I think something that could include a fun mini-game would be enjoyable. Something that makes you want to harvest whatever all day, even if you don't need it. Like a farmer isn't a bad idea, cause of the mechanics involved. Like Harvest Moon, it can be fun, but there should also be other things as well. A Shepard wouldn't be bad, if you could raise animals and harvest materials from them, like hides and meat. This would definitely cut back on people killing sheep and diremites all day for materials. I hate Diremite web and fleece btw -_- too many people farming it.
Outside of my opinions though, I would like to suggest something like a job for the classes. Add additional things for the gathering classes, or even adding new mechanics altogether.
Edit: I would at least like to be able to come up to a docile monster, like the Karakul Sheep, and harvest materials off of themI'll sleep diremites before stealing their web.

Perhaps something akin to water dowsing/well witching?
We could use tuning forks and determine the location of aetheric disturbances, or passages to the void? (from which something is gathered?)
I would love the idea of a Collector class. Not sure how it could work exactly, but it would be fun to be rewarded for collecting sets of items (perhaps even other things like skills, quests, FATEs, etc), and maybe have a "Collectors Log" that would show information about the items that the player has collected. I'm sure the idea could appeal to crafters, treasure hunters, and dungeon crawling players. It might even act as an incentive to get players to play different parts of the game they may have not considered otherwise.
