Because it's the most non-human/pretty race out there. Elves are boring and I've played more humans than I can count.

They are not small or oversized (Lala and Roe)
Their males do not look cro-magnun(Highlander Males)
They are dis-proportioned (Elezen)

The best Models go in this order:

Highlander Females
Midlander Females
Miq'ote (Either Subset or Gender)
Midlander Males
Lalafell (Either Subset or Gender)
Highlander Male
Roedaygen (Either Subset or Gender)
Elezen (Either Subset or Gender)

That's only true if every player viewed their char as an extension of themselves, which of course isn't the case at all.

Simply because I like the lore of Keepers. Otherwise I would have been a boring Hyur. They at least have good hair. Oh, and without even meaning to I picked the best race for my main job.
