Once you've got the specific quest done, you will be able to convert spiritbound gear into materia.
Then with high enough crafting skill you can then put materia into slots on gear to improve the stats.
It means youve killed enough enemies with the item equipped that it can be turned into materia.
Ok thanks! Should I sell them anyway or hold onto them for materia later?
If the gear in question says "non-convertible" go ahead and sell it, it cannot be converted to materia. But otherwise, it is a fairly good idea to keep it around. Early level gear materia isn't worth a lot, but you can still sell materia to other players for more than you can get when selling the gear itself to NPC vendors.
Also, fyi, the ability to convert you get from a guy who works for a goblin in central thanalan. You can unlock this quest at level 19, and the main quest will lead you to the goblin around this time anyway.
