You can do 8 Battlecraft/Fieldcraft leves every 36 hours, and 8 local (crafting) leves every 36 hours.
Leves offer better than normal SP, so they're supposed to be a supplement to leveling through other methods, and not the only thing players do to level up. But if you'd like to do more, you can always join other people while they do their leves.
You can run behests every 30 minutes. There are no limits to the number of behests you can join.
Turning in your old leves gives you a bonus to the (gil or Guild points) rewards for your new leves. If the leves are of a different type, or if they were offered in a different city, then you get more points for exchanging them for new leves. So you can maximize the rewards you get from your new leves. The way you can tell that you're getting a higher reward for exchanging them is, when you go to exchange them, there will be a number out beside the leve you're exchanging. That number will usually be 1, but sometimes it will be 0 or 2. You want to exchange the ones that are 2, and don't want to exchange the ones that are 0.

The 'type' Vydarr refers to is indicated by the picture on the guildleve card. It relates somehow to the basic structure of the leve, but I don't think many people have really looked into it in detail.
