All weapons have MDMG, it just isn't displayed for physical weapons. Check xivdb. Real reason for Cures being so bad cross-class is being ~150-200 MND under a WHM/SCH. (Edit: Though your exact example there is right; Curtana is way under Stardust Rod in MDMG for obvious reasons)
@OP: In early 1.0 THM was basically the best tank for 3/5 of the open world NMs, had a heal with regen on it, and the ability that allowed them to tank so well (Emulate) could be crossclassed. I tanked Great Buffalo on Archer just because.
It's not bad to want choice, but SE is probably hesitant to go back to that level of freedom after embracing its current design ethic.

There will be a wider repertoire of abilities as the level cap increases, as there will be both new class and job actions.
No need to cross class all the skills to jobs. Jobs are used to specialize the roles in a party. Take of the job gem and play on the base class; that way you can customize some more.
