Sorry, short of clicking the dialogue box to proceed through it fast, there isn't any way to skip the opening I'm afraid. SE was asked this during Beta and they stated it's working as intended that way. Really, as long as you're not making five hundred characters it's not too mind numbing to sit through (the ramblings that come later at the Adventuer's Guild are worse).
Very frustrating when you first start playing because you'll end up making several characters before deciding on one to focus on. At least I did. I just ended up alt+tabbing out of the game and letting it play out while I browse the internets. Still have to go through the scenes with the old man, but at least those are more tolerable and easy to click through the dialog quickly.
At least they could change it for each kind of race or job. Just to make it a bit more interesting. It changes a bit only depending on the City, doesn't it?
There are some minor differences due to setting, but all three openings are fundamentally the same (Gridania and Ul'dah ones are on a chocobo carriage that comes under attack by beastmen, Limsa is on a ferry that is attacked by pirates).
The only truly unique opening that differs from these three is for certain players of the original version who transferred their original character into the game and had passed a certain point in the original storyline got a special opening of their character teleporting in and just walking through the city gate. But everyone else gets the scene on the carriage/ferry with the merchant.
