As of now it really seems like stat potions are a joke, I was even trying to use a dex potion for fishing but the potions duration is so low that it doesn't even last long enough for me to catch a fish.

In a mmo food and potions usually end up being the basis of long term stable income but in this game potions seem completely useless.
What are you talking about? WoW potions function exactly the same as this. WoW had potions and flask/elixirs. You must be thinking of the latter which are long term as well.

WoW potions gave a ton of your main stat for a short duration.

Though the cd says 1 min, you can only use it once per battle(cd doesn't start till you're out of combat). But it was essentially a powerful extra cooldown that you would stack with your other damage cooldowns for great effect.
I have no problem with the long duration flasks and all, but it's essentially redundant. Potions are active consumables, and good raiders will use all the tools they can to help them during critical moments of a fight.

Potions are 16% (67 max) increase in a your main stat. With damage cooldowns used at the same time, your dps soars tremendously. When the economy settles down, I imagine people will be replenishing potions every week.

That said, it is less useful for tanks. That's the case in WoW too.
