The only mount I ever care about in mmos is the horses. Since Chocobos pretty much take the place of horses, I don't expect to see them in game. The one exception I can think of is Sleipnir, Odin's horse from mythology, and even then, that was not a true mount. Aside from chocobos, the "mounts" have been vehicles for the most part, not animals, but I don't see many vehicles fitting in the world of Eorzea.
However, each FF has always introduced something different, and I don't see why some different mounts can't be introduced, as long as they make sense and chocobos remain the main "mascot". Since Eorzea seems largely pre-technology, a few more types of animal mounts makes sense to me.
All that being said, I would still love to see a great deal of mini-games associated with the chocobo, including raising, racing, finding stuff, etc. I understand ffxi had some things like this, but there no reason they can't make it better.
Just an idea, don't know how popular it will be, but just like you have RL mounts that might be better at different tasks, you could have mounts that specialize in things. Like one that is better for carrying stuff, one that is swift (chocobo preferably), one that would go longer without feeding it (assuming they introduced a feeding mini-game) etc, etc.
It would be cool to see mounts brought to a new level than has been traditional in mmos.
Something they did have in a previous mmo, was mounts that added to your stats, if they were to introduce mounted combat.
chocobo only please, but that come in a vast variety of colours, shape, and gender. with armour personification and statistic.
in clear, a pet, trainable that can be use as a month and that can fight at your side when soloing. who have ability like choco cure, choco attack, choco meteor, choco flame, choco dash. A true trusty familiar that you need to feed and grow who can develop friendship and hatred. something that has never been seen. that improvement.
so far we only saw standard chocobos in different colours.
why not created more kind of chocobos like more resistant one with heavy duvet or faster one with big paw and strong leg, flaying one(or jumping), hell why not. ...etc.... there just ides.

Aldgoats - Well they looks like a natural mount, but they seems clumpsy.
Miteling - They're small, but im sure SE can find a medium sized one in their Goobie Bag. (slap a lantern on it's tail / stinger)
Other suggestions:
Drake - Medium Sized kindred or something
Wolf / hound (dont really want it to be wolf so i can be / feel like WoW ripoff)
Shadow Creepers - The hounds that pops up in the bike chase in the FF7 AC movie.
Moombas - They kinda look cool.
Manticore - Thinking of a medium sized FFXI manticore.
Salamander - a medium sized FFXIV salamander. (kinda slippery but wth...lol)
anywayz, i wish there were more unique looking monsters to choose from.

I would imagine only non-agro mobs would make realistic mounts.
I'd like to see mounts like:
Dodos
Megalo Crabs
Dhalmel
Aldgoats
Sheep
Antelope
Coblyn
Other things that make sense that someone could domesticate.
Things I DON'T want to see as mounts are agro mobs like wolves or drakes or raptors.

I dissagree, these "aggro" mobs could be something for high level beastmaster to tame & use as a mount. (possibly even sell as mount)
Dosent have to be "Easy" to get.
