    1. No difference at all. Totally based on luck.
    2. It's based on the item level, not your character level.
    3. You can convert with any class, whether DoW, DoM, DoH, or DoL.

    What does affect what materia you get is the item level, and what it's used for. For example, a gear that has stats like Gathering or Perception will give you a gathering materia, whereas something that has Strength might give you a Strength materia. Then whether you get a I, II, III, or IV materia is based on the item's level. For example, a level 38 Aetherial Heliodor Choker (it has Vitality, Parry, and one more stat I can't remember) might net you a Vitality II Materia (just throwing out an example).

    In short, convert away!

    EDIT: Good point from below post about elemental resistance/damage materia. I do have some elemental resistance materias, although I don't remember if the original gear had any elemental resistance stats on them to begin with.
