One thing in particular I don't miss was the fact that Dragoons were always left out.
One thing I do miss is the battle system. It seemed unnecessary to change it and I hope they at the least try to make the current battle system resemble it in the future. I also miss the old voice acting. Even if it was one or two scenes, you can tell the actors chosen are superior to the ones in game currently. Maybe not Moenbryda but most of the other scions in general.

I've never played 1.0. But some of the things that are being missed seem to remind me of FFXI. I loved FFXI. I remember having to travel for the first time to La Theine and how huge the zones were. It felt like a world. What ARR feels like to me in regards to open world is kinda like how SE changed how large the worlds felt going from Kingdom Hearts 1 to Kingdom Hearts 2. They feel small. Yes this is an MMO, but I expected the open world to be an open world, not a bunch of rooms put together.
And i think they need to add more content in the open world like FFXI, with the NM and areas that are too tough to travel through. I really hate this item level thing. And I would like more variety in gear, weapons, etc. It doesn't feel like an adventure as much as an action game right now. It doesn't really have many rpg elements that normally define final fantasy. I would have liked if they just upgraded graphics of FFXI, it would blow ARR out the water. I'm not dissing this game, its still pretty cool, I just see a lot of potential that just seems to be wasted.
Ive actually been playing so much of Dragon Age: Inquisiton just because of how huge the areas are and how much variety there is to traveling in those areas.
