Being able to chat while loading another map! And I like how on some quests instead of killing or collecting something, you just do an emote :P
Weather effects.
I like how the ambient noise scales depending on how many players are in an area. This happens both in cities and during fates. Hearing all of the people around you makes the game feel so much more organic.
Lalafell /grovel is the greatest thing since Taru /panic. And I couldn't stop laughing when you get the super flying grovel in a cutscene.
I'm kind of partial to the Castelvania music in Coerthas. Not so much its battle theme, though.
Everyone thought paid retainers and fantasia would be the end of it.

Little things I like:
-that you can sit and relax at tables and on benches while waiting on your friends to arrive.
-the weather in different areas.
-how one can turn off character names to take a better screenshot.
-the fact that NPCs look at you as you walk by.
-watching the light and shadows move across the desert or woods when the sun comes up or goes down.
The detail on the Fairy models when playing as SCH. Its like SE knew you'd be getting up close for a good look.
The way light reflects off your armor and accessories.
The sense of humor in the game.
The way the grass and brush is so finely detailed you can get lost in places in the Black Shroud.
The huge draw distances in La Noscea. And if you can see it you can walk to it.
