After you switch to a different class and become level 1 again are there quests for you to do or is it just a long monster grind to level back up?

If you used up all the quests on your first class, they won't be there for future classes. You'll have your new classes' hunting logs, FATEs, levequests, and guildhests and dungeons when you get to those levels.
Each city/area has its own set of side quests, so if your new class is in a city that's new to you, there will be quests there. But with each city having multiple classes, it's not difficult to get into the same situation again.
What I've done is focus on only the main scenario quests on my first class, then try to split up the side quests in a given area between each of the classes with that area as its home. E.g., do a few quests on CNJ, leave a few for LNC and ARC.
That's why it's a good idea to skip a bunch of quests as you're working on your first class so you've got more options for leveling your secondary classes.
Once you hit 15, you can do dungeons which give some great XP when coupled with the +50% xp boost for having a class higher level than your current one.
Later classes do get an XP boost to help with this problem. Whenever you're on a DoW or DoM class that's below the level of your highest DoW/DoM class, you get an extra 50% XP on any mobs you kill. Particularly if you can combine that with other XP bonuses (like my Free Company generally keeps the "Heat of Battle" action active, giving members extra XP) the early levels of new classes go pretty quick, not needing much more than the hunting log targets plus whatever FATES you run into on the way to finding those targets. As you get into middle or higher levels and the amount of XP needed to level up increases, it may become a bit more grindy, though.
[In case you're new enough to not recognize the acronyms yet:
DoW = Disciple of War
DoM = Disciple of Magic
in other words, these are the regular adventuring classes as opposed to the crafting or gathering classes, which are:
DoH = Disciple of the Hand (i.e. crafting)
DoL = Disciple of the Land (i.e. gathering)]
