Whats the "best" and most usefull craftjob for lategame/endgame paladins?
someone told me its goldsmith, because only jewerly has materia slots, all the lategame gear hasnt materia slots?

First, crafted gear is iLvL 70 and the highest current gear (AF2 and Allagan) is iLvL 90. So if you make any crafted gear, do so knowing that you're making more or less the 2nd best current gear in the game and not the best.
Armorer and goldsmith are the best crafting classes for Paladin at endgame because you can make HQ gear and add materia to them. Occasionally, darklight will be better than crafted because it has the stats you want most. You should check out geared players on the lodestone to see what HQ iLvL 70 gear with maxed materia is capable of. The crafted gear is so expensive and time consuming I'll probably just get darklight myself though because darklight takes much less time and effort to get. Also, only crafted gear has materia slots. So tome gear and dungeon gear can't have materia added to them but all crafted gear can have materia added.
I have only beat all the 50 dungeons and ifrit hardmode. I haven't even tried hydra, or garuda hardmode, or all those other more difficult things. So if someone with more endgame experience has corrections to what I said or would like to add information, please do so.
i dont care for bind on equip crafted stuff
only for things i can ONLY do with my craft jobs , like adding materia or something like thatunique things.
so all the craft jobs are pretty useless without materia sloted items?
its possible that another crafter is adding materia to my gear, or can i only add them on my own?

I don't have a single craft above level 10. However, yes the crafted gear is pretty useless without using at least the first two free materia slots that most items (maybe all) have. After a couple of materia are added to an item, the success rate of additional materia goes down to like 50% then 20% then 8% or something. Those numbers are not accurate at all but just give you an idea that your last materia adds get increasingly difficult to do.
You can have another crafter add materia to your gear. It's called melding. You go to the crafter, then request a meld. So if you had millions of gil, you could buy all the crafted gear you want and materia individually and have crafters meld the materia to the gear.

I'd say that all of the three metalworking classes would be good to have so that you can repair all of your own gear (well, most of your own gear. You might have a leather piece on your neck.

The jewelry is by far better than anything else you can get (after melding). I'd say best craft is goldsmith.
