I did experience the shaking camera issue, but this mostly happens in Limsa Lominsa region, however, I don't remember experiencing this issue recently though, so I thought they fixed this through a recent patch update.

Happens to me as well. Only on "downhill" grades though. (So if outdoors which is very uneven, it's pretty much constant.) Last patch fixed the name bouncing but the character still does.
I've found that if you limit your FPS via FRAPS or any other method to about 30, it stops or becomes hardly noticeable. (But why play like this?) Based on my research I've come to the conclusion the problem plagues higher-end systems, as people with mediocre ones don't experience it. (Which relates into limiting the FPS)
Running on HD5850, Intel i5-750, Win 7 x64
Screen tearing is another thing, Had to use D3DOverrider to force on V-sync since it's not built in... but like I said that's another thing lol.
All I'm going to say is before they ever mentioned the shaking of names going downhill, I never noticed it much. Now that they said they fixed it, I notice my camera shakes quite violently going downhill. I think I would rather have my name shake subtly instead of feeling as if I was running through an earthquake lol.

I am still having the character shaking/jumping problem as well. I am on Win 7 x64 using an ATI Radeon HD 5830 with a DSL connection.
It happens all the time, in any area as long as my character is walking down. The name is less shaky since the update but the camera and my character are even more now.
I am really hoping this will get fixed as it gets very annoying, although not gamebreaking.
Agree with the thread, and also I don't like when the character appears to be flying in the ground in the stairs and hills

Walk down an incline or uneven terrain, character name + character + camera (if panned all the way up) would start to shake/vibrate. The camera will stop if you pan it down a bit, but the name & character continue until I get off the incline. If I stop moving while on the incline, everything is fine. It only happens when my character is in motion and traveling downward on a slope.
Comments:
Originally I had this problem early on, either during the beta or launch, then it was resolved by one of the patches and I was fine for a very long time. Then after one of the patches earlier this year this issue resurfaced and was very bad. The "fix" for it that was mentioned in one of the more recent patches did reduce the shaking/vibration a by a little, but the problem is still here.
Areas this commonly happens to me:
1. Ramp leading to entrance of Limsa (ramp by zone line between Limsa and Lower Noscea)
2. Entrance tunnel to Cassiopeia Hollow (ramp leading down)
3. Entrance tunnel to Mun Tuy Cellars (ramp leading down)
4. Steep paths down the cliffs when running to Camp Horizon from Camp Black Brush (steep ramps along the indicated path)
5. pretty much anywhere that has a slightly steep downward slope
I'll jump on the wagon since this has been pestering me since the launch.

Steps: As stated before..
1. Only happens on "downhill" grades
2. Does NOT happen on "uphill" grades or "flat" ground
3. Length of grade can be very long.. i.e. steps in town; or very short i.e. small bumps in outdoor environments
4. Game looks beautiful other then this one huge distraction!
5. Happens no matter the graphical settings, one extreme to the other.
From my own research into the issue:
1. Seems to only plague med. to high-end systems. (Those that can maintain 50-60 FPS)
2. Limiting my FPS to ~30 stops the problem.
3. I've seen A LOT of other 5850 users complain about this issue.
