While I appreciate their desire for realism...it really isn't necessary for in game. Really we have more than enough gil sinks as it is. In fact so many that they already had to ease up on a few of them.

That may be--but the market fees wouldn't be the place to start, because they're self-adjusting; a good source of negative feedback. If deflation starts hitting the economy, the market fees will collect less gil as the prices go down.
