
I agree with most other posters.
Profitability depends on demand on your server and if you have to buy materials or gather them yourself.
What most people fail to include in their prices are shard/crystal/cluster prices.
People sell stuff for 500gil where shards alone already cost them 300-400gil. That's the stuff you should avoid.
There is no general rule. Check what's in low supply and sells, make that but don't flood the market. I always see people suddenly putting 20 HQ body pieces for sale and suddenly price drops to 50%...it's stupid.

What you shouldn't underestimate is the ability to make stuff for yourself or repair your own stuff.
Need some Materia? Make a few "cheap" accessories and spiritbind them.
And as a lvl50 crafter I can assure you, there will always be some gil to make if you are smart and don't expect to get rich over night.

I think you will want Mining in the mix and avoid using the Market Board for materials as much as possible if your interest is profit.
To help off set shards, every 12 hours or so, comb through your leves at the Ul'dah Adventurer Guild with the levemete receptionist to see if any of them are giving 40+ shards.
Also, target folks that are power leveling crafting by making HQ leve turn-ins (make sure the cost is more than the gil reward of the leve itself or you will not make money).
Things like HQ Poisoning Potions, HQ Lanolin, or HQ Smelling Salts.
I've leveled 2 craft to 50 (1 of the fully geared), and most of the others to 15...never quite harvested anything myself, and I still have 500k sitting in my account, and another 300k in crystals (at 25 per piece), and probably another 300k+ in mats...and I'm the middle income in my LS. It is doable.
GSM could face a tougher time selling their goods because most people went for it as their first craft thinking that they can sell their accesories. True for the first week...but now I'm just selling HQ ingots when there's a shortage in the market. As with all craft, hedge and plan your material needs so that you can get it cheap in the market, leaving you with a larger profit margin. Sell only when there's a shortage, and pull out of the market when it is being flooded.
