For tank jewelery all stat caps can be found on xivdb.com.
There are no V materia, and IV is too expensive to penta meld. You'll want to IV your first slot, then III for the rest; maybe II for the 5th slot depending on luck/wealth.
Stat caps for DPS Accessories are +10 Vit, +12 crit/skill speed/parry.
I was playing around a bit with the Parry mechanic on Warrior and parsing data on different setups.
I would still need to do 1000's of more tests and on varying level ranges of mobs but so far but it seems the stat "Wall" for Dex/Parry is related to mob level.
On the level 47 Efts I was testing on (because you can just stand close and they will forever AA you and auto regen is enough to never die)
when I was able to get
Parry above 470 and Dex above 235 then I jumped up to ~25% Parry rate (only tested with 500 hits)
With much higher Parry and lower Dex I only hit around 18% Parry Rate.
With much higher Dex and a lower Parry I only hit around 13% Parry Rate.
Edited: Further testing on low level mobs (Lvl 43) showed no difference in parry chance compared to the lvl 47 Mobs. I suspect that one of my stats, either Parry or Dex or a combination hit the next level at what would appear to be related to mob level. Pretty much assume that mob level has no relevance to parry chance and it was only a coincidence. The next Parry/Dex wall is too high for me to hit with my gear @ 470 Parry and 236 Dex, but it would be cool to know what the next level would be (30%-35%?) I suspect it's probably around 510-520 Parry and 270-280 Dex. But that would sacrifice a lot of other stats to hit maybe 9% mitigation on only things that can be parried.
I don't have the gear to attempt 500 Parry and 250 Dex on level 50 Mobs. Or to test with those stats on the lvl 47 Efts. I will probably try on lower level mobs but I think the amount of misses might skew the results even though I can manually ignore them. By ignoring them it's not sure if they would have been a hit or parry, so it still kind of skews the results.

Would just like to add as well that my Paladin with Holy Shield was getting 13% for both Block and Parry (Combined 26% chance of mitigation) With added Dex (237) it moved to 15% Block and 17% Parry for 32% chance of mitigation.
So from ~6% to 7.5% mitigation by increasing Dex on PLD. (Block @ 25% and Parry @ 22%) (47 pts of dex on my character from 190 for lvl 47 mobs)
On war it was ~4.5% to ~6.5% by getting both Parry and Dex over the wall. (@ 405 STR for 25% Parry)
It looks like Parry will have better scaling per stat on Warrior once we get higher stats. Hopefully more in depth testing will show that. But it will also require really good gear (Full HQ + Melded Gryphoskin vs DL/Myth Accessories) and stacking STR and DEX without sacrificing VIT and Parry.

The efts aren't a very good test subject just because their specials can't be blocked or parried (or just more annoying because you'd have to go through the log and count how many bombs etc they did). I parsed awhile ago on lvl49 3rd Cohort Hoplomachus as all their specials can be blocked or parried with 205 Dex 470 parry vs. 250 Dex 470 parry, the end result was about a 2% increase in block and 1% increase in parry. Further testing with 278 Dex and 470 parry yielded the same results as 250 Dex 470 parry (which I expected since it seems like all stat thresholds seem to follow the same tier formulas).
Testing also resulted a roughly 5% increase in parry rate without shield equipped.
Also the results were roughly the same training a bunch of lvl1 squirrels and letting them beat on me for a good hour with the same stat variances. Level seems to make no difference in the rate of parry or blocks (although I have yet to test on a lvl50, so this may change but I doubt it).
In short, you would need massive amounts of Dex to make any noticeable difference. Parry also seems to be gimped somewhat on a paladin and the returns are less just because I think shield block takes precedence over parry. Vit still remains the best stat point for point in terms of pure mitigation.

This isn't to say that you should always put your points into Vit. There are several instances where as an offtank the raid or group would benefit more from you speccing into STR, or using gryphon skin jewelry/dps gear. It just varies depending on the encounter so it's always best to be prepared.

I'm trying for the accessories but not having much luck with over melds, I'm prioritizing VIT first, what should i go for next Parry or CRT?
check any forum dedicated to tanking that isn't this one. blue gartr is one decent place to start, official forums tend to be one of the worst places to look for solid info (we have many more threads in the tank forums here talking about how wearing dps gear is better for tanking, and how marauder/warrior dps is some of the best in the game)
it really boils down to eHP, which is a concept foreign to the majority of posters here... i wasn't really aware of what it meant/how it worked either until i started reading the tankspot forums/guides years ago.. (a better place to start if you're curious about the mathematics behind it)
the super dumbed down reasoning is this: you gear yourself to have the highest possible TTK (time to kill), there are thresholds along the way for both mitigation and raw hp that make one or the other better than the other, but what we're seeing in ffxiv is that base mitigation is so high compared to our HP values is that it's almost never worth it to sacrifice vit for HP - i.e. sacrificing the 25 vit from ilvl90 of fending jewelry for the +45str and +45dex you'd get from fully melded ilvl70 jewelry isn't worth it, your eHP goes down by that trade-off
it's entirely possible that it'll be worthwhile to use str/dex jewelry after HP values hit that critical point though... but that's only assuming that the ilvl100+ tank gear doesn't come with some built in +parry/block rate/strength on it
edit: i want to say that the HP value for paladins to start looking for mitigation stats rather than raw hp is around 8k, but it's been months since i looked at the math for this stuff
edit edit: also, this is only assuming MTing, and only assuming you want to gear yourself as the most survivable tank possible - in this case of offtanking (cough turn 5) most of them (paladins and warriors) swap out fending jewelry for the of maiming/striking variety, the very dedicated even reallocate their vit to strength, but this has nothing to do with eHP and everything to do with the fact that their role in the fight is a dps the majority of the time

So, I'm currently working on penta melding my accessories...trying to figure out what order I should do it...I'm thinking Vit 4, Crit/parry 3 (idk which one to honestly prioritize right now or if I should keep them even), 4th slot idk what to put, 5th Vit 2...Any suggestions?

Interesting thread, This makes me happy that I kept with my WAR for as long as I did. Only thing that bugs me is, if for WAR to tank at its most efficient capacity means you have to buy and meld a bunch of HQ ilvl70 items doesn't that kind of leave it still as the less desirable tank? I mean for PLD to tank coil you really only NEED Darklight gear, or you could get AF+1 and grab the Allagan drops then tank it very easily never having to spend 1 gil if you don't want to.
I just don't understand why SE would expect someone who wanted to play WAR well to make millions of gil and spend it on crafting and melds or take all the time to get the crafts up and make it all yourself. Why would they set it up that way?
So, what do they say on Blue Gartr? Could not find anything specific backing up what you're saying. Don't get me wrong, I too like to know what all this fuss about the dps jewelry is. People vouching for dps jewelry have a good point imo.
Not talking about "is it worth it to have 1 STR more for 500K", that's all subjective up to a certain point. Talking about BiS.
