There are times when this strategy is helpful. Generally, I agree that it only works in random groups, not in coordinated play. It's very common for SCH to position the fairy in the middle of the room or at the corner of one of the walls so that, as they kite the melee/tank, they can pass by the fairy for heals. In that situation, it's not terribly useless to kill the fairy.

That said, if your tank and/or melee are on the fairy, this leaves the scholar available to heal their teammates, who will make short work of your healer/ranged dps while you busy yourself with the fairy.

Also, any healer on any decent team with have the points for the PVP Raise ability that is far superior to Swiftcast+Resurrection (it requires only one ability and gives the raised target 50% health and no weakness). So, even if the scholar is stupid or otherwise occupied and allows you to kill Eos, they can just Swiftcast+Summon or get to a safe spot for hardcast [Surecast+]Summon.

A somewhat better strategy that I use (as summoner) is to pop my DOTs on Eos when the healer uses Attunement (assuming that the fairy is nearby / on "Heel") and then quickly pop Bane when Attunement wears off. Not only does this put up DOTs on the healer, it also forces them to decide whether or not to use Leeches on the fairy.

Bad teams only let the SMN reek havoc. u_u Trinkets work in this situation very well.
