I would venture to say that it's entirely dependent on how much ease you have while soloing content. If you're staying alive just fine, I wouldn't worry about making it a healer or a tank at all. If you find yourself doing good dps, and doing more of a grind to level, maybe try having it heal so that you can pull multiple mobs at once, or a tank to keep threat while you put your dps to good use!
In the end there is no 'silver bullet' answer, just try out the different roles and see what works best for you!

Im a tank so im focusing mine on healing first level it gives u a little regen last like 15 sec im sure at higher levels it gets better. What is the best way to level chocobo
At level 30, I can take on a level 32/33 mob without losing 15% life. Just wasnt sure if I should have him leaning one way or the other for higher levels. Also, once I can summon him, can I use him while leveling up other classes under level 30?
You can use Chocobo companion on any level of any secondary class but it will indeed always match the lvl of the current class. You can also change classes while it's summoned as well as summon it directly by any secondary class. The progress of the companion is kept independent of on what class you use it.

I'ma CNJ and I making mine into a tank but can he change later?
As long as you have enough SP points to assign you can develop any of three branches there however I don't know (yet) if it would be enough after reaching it's max level to fully develop all 3 (or even at least 2) of the branches or not.
I'm pretty sure it's impossible to max all 3 roles. I seem to remember the help text stating so.
To be honest I'm a white mage, and I've found the companion utterly useless, it prevents you from mounting up when it's summoned, you can't queue in duty finder, nor can you undertake any instanced quest content when he's out. They also take an eternity to level up, requiring you to grind mobs rather than do fates or quests, which will severely slow your XP gain.
I have the tanking tree and he never takes aggro so that tree is useless.
As for the attack tree, if a white mage can clear the game with her low offence, no other classes should have an issue.
And for the healing tree, as I mentioned above you can't use the chocobo in any content where you actually stand a chance of dying so it's pretty pointless.
In short, ignore it don't waste your time levelling it.
While I wouldn't call it useless, I agree that it's not very helpful with the game in its current form. I'm sure there will be content later down the road to make them shine - maybe even a dungeon designed around companions - but for the moment it seems to be a gimmick at best.
As for choosing a role, I think the safest bet would be the offensive skill line. As Ramiren pointed out the tank role doesn't appear to be very reliable. You can probably make it work by letting your chocobo build some hate first, but it seems very situational.
Healing might be useful to some degree, but their potency and intervals between cures seems rather low. However, keep in mind that skills get more expensive further down the line. The last attack skill costs 10SP - enough buy the first 4 healing skills for example. So I'll probably end up with a combination of healing and attack to get the most out of my points.
Yeah I'm thinking of the same.
The DPS tree seems like a better bet.
I guess in large fates like Gigomeria w/e it'll be sorta useful...
Is there anyway to remove points? I don't think I want tank anymore, he does nothing.
