Hildebrand rode on the back of Bahamut because he's a boss that way. Bahamut was like, "NU I DON WANNA CRASH TO TEH GROUND" but Hildebrand grabbed him by the manboob, and in one gigantic titty twister, threw Bahamut - and Dalamud - to the ground in one gigantic force of MAN.

Probably at one of the other 10 shrines. They only had a certain amount of time to make the sequence of NPCs praying match the second refrain in Answers in order to keep the emotional power behind it. Had it been too long there wouldn't have been enough time to show Loiusoix attempting to seal Bahamut without moving beyond that section of the song and breaking the flow of the video.
They deemed NPCs from the 3 nation's storylines as the most important to show, as they're the one's most players know, being introduced in the very first part of the game. If the goal is to build hype for ARR and bring players back, why show someone most players who quit after month 1 don't know?

Every time I hear someone mention Bahamut and Odin all I see in my mind is Bahamut standing around acting all badass and suddenly Odin appears and Bahamut is all "Nonononononononono".
