I just want to press 3 buttons.
Anything you want, but please stay away from dutys with other players.
There is no 3 button class and never will be.
Also, "easy" is everything when you know how to play it.
But I would recommend you the RDM or any ranged physical attacker.
Gatherers. Technically you can gather with just one button! So I've saved you two buttons. Just uhh... don't expect to get any high end gatherer gear since you'll need more buttons to gather collectables.

"Easier" jobs are probably:
WHM for healers
RDM for DPS
PLD for tanks
RDM...but I feel like OP would be one of those people who would never bother building both gauges.
MCH, RDM, all tanks.
Probably the last thing you want to hear, but I would recommend trying out every job until one "clicks" with you.
The easiest jobs imo are;
Tank: WAR (Least buttons out of every tank)
Healer: WHM (Super straight forward)
Melee: NIN (The hardest thing is mudras, but you can learn the patterns. Flanking only every 30s.)
Ranged: MCH (Honestly, I felt like I could faceroll my keyboard and regurgitate DPS)
Caster: RDM (Probably the most forgiving caster)
Any pvp DPS job. The combos there are all on 3 buttons.
Nothing on pve.
Glare / Stone
Dia / Aero
W/e heal is required.
3 buttons.
Blue mage.
If we are talking about real jobs, RDM or DNC. You can get away with these 2 jobs doing OK DPS with minimal effort.

Dragoon. Expert dragoon strat is wait for big yellow thing to appear on the ground then use any Dive or Jump ability. Does Accept on the Raise box count as another button?
RDM: Is apparently easy but I've never sat down with it long enough to say
DNC: My main class. Doesn't have many buttons and the rotation is very RNG based so you don't always have access to all of your buttons
BLM: Relatively few buttons, fewest button PRESSES of any dps class. Not an easy class at all but the difficulty is knowing encounters well enough to be able to anchor yourself and turret away, not in getting your fingers tangled up.
RDM takes a good bit of time to get used to but once you are it is indeed "easy" - however it's not easy for a starter as you need to be level 50 to unlock it in the first place.
Ideally some rethinking about how to introduce ALL the extra jobs needs to be done so they can be unlocked earlier on - but as they did not do with with rogue I have little hope it will get done.
Any of them as long as you stick to content level 17 and under.
You could also try playing games where classes only have 3 actions to choose from. Last time I played Trove, classes only had 3 abilities (though gems could give those abilities special effects). I haven't played it in 4 years though, might have changed since.
Probably DNC. With RDM you atleast have to focus on resources and buff timings. And starting from scratch is "harder" than many other classes.
You need to be aware of buffs as DNC too. For yourself, your dance partner and your raid.
I'm not gonna say that this makes DNC a HARD class...Just that for DNC it's indeed a thing. It's probably the biggest thing a DNC actually has to pay attention to since RNG dictates a pretty good chunk of the rotation (don't need to worry much about buttons you couldn't press even if you wanted to)
No class in 14 is literally 3 buttons. you may like demon hunter in world of warcraft though (not trying to be snarky, it literally is 3 buttons lol)
In my opinion that is RDM. Even a caveman could play RDM.
DNC is quite chill.
Otherwise this game is filled with button fetishists that enjoy using the same skill spread over multiple buttons because reasons, or just general button clutter.
DNC is the easiest class, period, when it comes to the skill floor. Not much you have to deal with.
None of the jobs should be ideally played with 3 buttons but in the general concept of easiest in each role:
Tank - Warrior. Maybe in previous expansions it would have been Paladin but Paladin has maintained some of its niche skills while also gaining some complexity meanwhile Warrior has just generally become a more simple job. So I do not think Paladin is anymore the 'easy' job, though I would still give it credit for it's potential stability (in that you can pull groups through a number of situations due to skills like clemency or cover, both of which fall more into the niche since in a normal regular day you shouldn't have to be using them).
Healer - White Mage. You might be able to even do the 'healing' part of your job with just three buttons for all but some ex and harder content lol. Uhm.. hopefully you're using your other skills though. . . :P.
Melee DPS - Ninja. Unless you have trouble remembering the ninjutsu combos (which are easier to remember if you think about what they end with rather than the whole pattern).
Physical Ranged - Dancer. Pretty straight forward, proc based, get to feel like a bro.
Caster - Red Mage. Just don't cause your job gauge to break :P. Also nice bro moments with raise candy.
BRD. Press heavy shot until you see marching ants around something then press that. Also never use Duty Finder. You'll be fine on the world map though.
Or if you're into fighting games, there's always Divekick.
I would honestly say dancer.
It has those burst-y phases to it where you might find yourself pressing a lot of buttons but other than that, it's a pretty easygoing job.
En avant is what makes it for me. Just really fun to dash about.
Then you should try a tank, especially Dark Knight, the rotation is literally a 3 step combo. Sure, there are two other skills wich you have to use pretty often, but they are ressource-based, not time based. And all the defensive cooldowns are situational as well. And most of the time you press the same button for defense anyway - The Blackest Night, DRKs powerfull shield.
