I never really did them much, so ehh.
I try to get my weekly 450 tomes.
I've been trying to max out all my jobs. Just got done with that.
I've been working on finishing anima weapons. Just got done with that, so now I have all 2.x, 3.x, and 5.x (the only available state of them thus far, anyway) relics. Not fond of the prospect of doing 4.x relics; Pagos kind of killed it for me.
Going to keep working on those 2k mentor roulettes.
Want to finish Rathalos EX (which is made quite a bit more trivial now with level 80) so that I don't have to carry these damn scales anymore.
Also, work on tank achievements.

Craft, grind weapons, gather, roleplay, scream into the void and contemplate my existence. You know, the usual.
Personally, I work on achievements, collecting stuff and spending hours taking screenshots. All of which are better with friends.
Does this include old extremes? Been farming them for mounts a lot lately :p
Level up other classes, do relics, old beast tribes I missed back in ARR/HW, chat in LS, craft, gather, and failing all that leave the game until I feel like playing again to go play something else like i'm doing right now playing the Trials of Mana remake Square released.
EDIT: Oh I also forgot to mention mount farming.

Nothing wrong with casual content in ff14, I enjoy a lot of it, but if I had no endgame content to work towards it just wouldn't be my type of game anymore.
I'd unsub and find a different game. The only thing that's fun on healer anymore is trying to push a parse.
I don’t do any them things current) but what I do is craft, maybe gather. Look for bargains on the mb, got weekly collectibles to do, working on crafter relic one a week using scripts to buy mats for. Working theough things I don’t have - atm I just found out two emotes I do t have on Centurio seals so I’m doing hunts daily to buy these.
Working on tank mounts, doing fates to build up gems to buy stuff to sell or use. Working on gates at the gold saucer. I’m always tweaking my house and garden about to try new things with it. I even just found out today I can get a mount for 10 potsherd in potd I don’t have so will probably start work on that too if I can.
Got plenty to do :) and I haven’t even started arr or hw relic if people want to do them too
I can't imagine playing this game without ex and savage content. I do some casual stuff too but it get boring really quick .
Seeing as how I never do Ultimate or Savage, and have found Extreme to not be worth my time/sanity...
Lately I've finally decided to get started on crafting with the new Dwarf crafting tribe coming up. Have Weaver and Goldsmith going and am quite enjoying the "new" crafting system since I bounced off of the old one pretty hard. I also dip back into combat classes to work a bit on a couple I don't love but want to eventually cap (Bard and Dragoon). Just to keep up on my preferred combat classes I'll occasionally do a Copied Factory run or something similar. I'm also waiting for the Relic weapon stuff to really kick off to work on that.
Basically, if Ult/Sav/Ex suddenly disappeared from the game or new ones were never added from this point on, I'd be doing exactly the same things that keep me playing and enjoying the game now.
Queuing for duties. Personally don't absolutely need a reward, I just enjoy doing the instances itself for fun.
I'm actually on hiatus from Savage this tier due to wanting more time with my girlfriend/being tired of raiding after 7 years of FFXIV raiding. So I've been finally working on leveling all my jobs for the first time since Heavensward. Crafting and Gathering I don't normally touch, but they have the appeal that i can login and chat with my old buddies and get some stuff worth gil. Still capping weekly tomes and doing normals, though I will confess I have been doing Memoria Misera in the PF regularly to get dyeable AF for jobs... but it wouldn't kill me if that wasn't available.
Another way I've been spending time with the game is I have been working on a Let's Play of FFXIV, each vid about 45mins to an hour with a few outliers so far. Been really fun paying closer attention to the story, reading older story beats with a new perspective, not too mention all of the foreknowledge about the later story events. Seeing the foundations being laid, knowing what comes next is real fun to me. I've done it before too, during patch lulls. Almost every patch lull I create an alt and raise them from scratch into the endgame.
Farming the extremes, mount farming, achievement hunting, housing redecorating, catching up on other parts of the game ~
Never really done savage nor extreme primals, simply little interest for me in that department, but..
Crafting/Gathering, grinding relics, completing the shared FATEs, solo HoH/PotD (eventually), grinding achievements, and just helping FC with whatever
leveling more classes, Heaven on High/Palace of the dead, treasure maps, achievement hunting, farming mounts,farming glamour, crafting/gathering,playing mahjong, socializing...
Most of the time I hang out in Eureka these days. Also did another Anima-Weapon from all the Poetics I got there.
Well I've been spending a lot of my time in Eureka lately, so there's that.

Without Extremes, Savage and Ultimates nothing would change much for me since I only occasionally try out some of the new Extremes and do not really care much about those other modes in general. I spend my time leveling, doing my daily dutyfinder challenges, beast tribes, trying to grind out ShB fates, selling stuff on MB, roleplaying, leveling trusts, doing weekly crafting and gathering turnins, completing sidequests, checking out gold saucer once a day for mini cactpot, grinding for relics ... and other stuff I can't think about right now. Usually my day is far too short to do everything I just listed.
Level alt classes, do relics, farm glamour gear and craft
..also find out how to get good Tank Circlets and metallic caster/healer robes since no Savage means no Omega headwear and no Gordean gowns (prollytheonlyreason I's consider doing Savage, and it'd be undersized)
The vast, vast, vast majority of players will carry on as we always have.
My gameplay experience would remain about the same. A lot of time with housing, fashion, floating around with friend. Regular visits to Gold Saucer, a lot of crafting, a lot of PvP.
I'm leveling all classes to 80. Then...I don't know. I'll always stay subscribed for the continuation of the main story quests, though. Every time new content comes out, I'm like "Yeah, I'm going to try Savage this time!" And I never do because trying to find a static isn't something I really have any desire to do and pugging it is not an option because 92.87% of the people that play this game are...not that bright.
Story content on main and multiple alts, lore discussion, assembling glamours, taking screenshots of glamours, levelling ever more classes so I can actually equip my glamour ideas...
I don't do any of those with the exception of EX, and even then, I hardly do them when they are relevant. I still haven't done Hades and beyond. The amount of time it takes to actively participate in that content is part of the reason why I tend to stay away. PF for EX trials is much more lenient and forgiving when it comes to time constraints. But that time would definitely cut into what I really love doing and that's DoL/DoH activity, housing, glamour chasing, and market-boarding.
I'm always looking for some kind of 'big grind' that will consume a great portion of time. There are many to be found in the game, so you just have to find something that will interest you, and you can even deliberately slow down your own progress if you like. An example of that might be having a goal of maxing out another job, but instead of just buying your gear from an NPC, you decide to craft it all yourself, and instead of buying the mats off of the MB, you also choose to gather everything yourself.
This is how I constantly do things in this game because I know once the destination is reached, the grind is over. There are a lot of mini goals on the way to accomplishing the bigger goal, and some are even discovered along the way. Crafting and gathering really made that possible. It's how it all got started: "Ok for this I need some thread, lumber, and an ingot. To make the thread I have to gather flax; to make the ingots, first I have to craft the nuggets; to make the lumber I need to use Alchemy to make the alumen... And I'm pretty sure this just started with wanting to make a pickaxe or something. It just goes on and on like that, and before I knew it, I'm just like screw it man, I'm just going to max them all out.
Anywho, you don't necessarily have to craft and gather. I just used it an example. Fishing logs, hunts, clearing PoTD/HoH, treasure dungeons, mount farming... Like I said before, there is lots of stuff to do that can potentially consume a large portion of time.
These days, I only log in for raids so... nothing I guess? I don't really need the 450 tomes. I don't need the Eden normal gear. I don't like dungeons.
I've been around for 3 or 4 years now, I've had the mounts, minions, glams I wanted. I have all my crafters, I'm struggling to finish my two last jobs for the amaro. I'm mostly looking forward to 5.4 now, and 5.3 MSQ to keep me busy for an hour or so :D
Cancel my sub and come back next expansion for the story
The same things I always do - Level jobs, POTD and HOH, gold saucer, crafting logs, legendary fish, various achievements, collect mounts from outdated EX trials, and probably a few more activities that don't immediately come to mind. Help my friends with stuff.
Sometimes I feel burnt out and take what for me constitutes a break by only logging in to check my retainers once or twice a week for awhile. Never for more than about a month, though. When I find myself staying logged in just to watch the idle cam or replay cs at the inn, I know it's time to choose something to focus on and get back to the game.

I don't do any of that stuff you mention OP, so I don't even have to imagine what I'd do. :)
I level up jobs, gear up the jobs where necessary (level 80s are all on Neo-Ishgard gear since I don't do any content to get higher ilevel than that, and I'm happy with that), do the daily beast tribes and bounty hunts, craft stuff, gather stuff (Ishgard Restoration, weekly collectables, House of Splendours collectable turn-ins if necessary), glamour stuff, train the squadron for the weekly shiny run, torture my retainers, stare at the scenery, challenge log stuff, help my daughter with her levelling up and gearing up, plus I still haven't got Rank 3 in all the maps for FATEs on the First so that's something I'm working on as and when the mood takes me. I also have an alt who needs attention every now and again, and other alts who may have a look in sometimes, too. If all of that wasn't a thing for any reason, then it'd be Big Fish time again, or maybe I'd pop into the company workshop and progress some stuff there (also a long, slow burn there since I'm the only one who does it). If I was really super bored, I'd redesign my housing interiors (I have the FC house, with a room for my main and a room for my alt, an apartment and a private house next to the FC house. I'd have to be mental to faff and re-do the lot of them, but I can't claim it's never happened before).
I still have this thing where I consider regularly running stuff with a static (haven't worked up the nerve to even get the ball rolling on that, however), but I honestly don't know where I'd fit it in.

Redecorate housing (I do it for others occasionally in addition to my own).
I guess I pretty much just keep playing the game outside of the things you mentioned and PvP.
If there's nothing else that interests you other than what you listed, then by all means take a break and play other games. I always find it strange when people act like a single game should be able to occupy 100% of their free time, or that there's no reason to play a MMO if you're not doing the high end content.

Not a hypothetical lol. In the 2 years that I've played, never done current tier Savage or Ex trials.
Mostly doing playing the MB and casual content like glams, Khole's Wondrous Tales, Gold Saucer stuf, Treasure Maps etc. Unsynced runs of old content for mounts,glams etc.
My dream MMORPG would be one which would let me progress without a combat class. But since there are currently none out there or lack the polish that XIV has, after doing MSQ, I just end up doing all the side/casual content.
